Ingredients

1 3/4 cups confectioners’ sugar

3 large egg whites

Instructions

  1. Preheat your oven to 300°F (150°C). Line baking sheets with parchment paper.
  2. In a mixing bowl, combine egg whites and granulated sugar, then whip until frothy, adding cream of tartar until stiff peaks form (4-6 minutes).
  3. Sift together almond flour and confectioners’ sugar in a separate bowl.
  4. Gently fold the dry ingredients into the meringue to form a batter that flows like lava.
  5. Pipe heart shapes onto prepared baking sheets, leaving space between them.
  6. Let the piped shells sit at room temperature for 30-60 minutes until they form a skin.
  7. Bake for 15-20 minutes until tops are firm and can be lifted easily.
  8. Prepare your filling while baking; whip butter and gradually add confectioners’ sugar and flavoring.
  9. Assemble by spreading filling on one shell and pressing another on top.
