Ingredients

- 1 cup Long Grain Rice
- 2 tablespoons Olive Oil
- 2 cloves Garlic, minced
- 2 cups Vegetable Broth
- Fresh Lemon Juice (from 1 lemon)
- Lemon Zest (from 1 lemon)
- Salt, to taste
- Black Pepper, to taste
- Fresh Herbs (like parsley or dill), for garnish
Instructions
- Rinse the rice under cold water until the water runs clear.
- In a medium saucepan, heat olive oil over medium heat and sauté the minced garlic for about 1-2 minutes.
- Add the rinsed rice to the saucepan and toast it for about 2-3 minutes until slightly translucent.
- Pour in vegetable broth and add the lemon juice and zest, stirring to combine. Bring to a boil.
- Reduce heat to low, cover, and let it simmer for about 15-18 minutes until rice is tender and liquid is absorbed.
- Remove from heat, let it sit covered for 5 minutes, then fluff with a fork. Season with salt and pepper, and sprinkle with fresh herbs before serving.
Notes
For a healthier alternative, you can use brown rice which offers more fiber and nutrients.
