Description

A refreshing and flavorful Mediterranean side dish made with lemon juice, garlic, and herbs.


Ingredients

  • 1 cup Long Grain Rice
  • 2 tablespoons Olive Oil
  • 2 cloves Garlic, minced
  • 2 cups Vegetable Broth
  • Fresh Lemon Juice (from 1 lemon)
  • Lemon Zest (from 1 lemon)
  • Salt, to taste
  • Black Pepper, to taste
  • Fresh Herbs (like parsley or dill), for garnish

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. In a medium saucepan, heat olive oil over medium heat and sauté the minced garlic for about 1-2 minutes.
  3. Add the rinsed rice to the saucepan and toast it for about 2-3 minutes until slightly translucent.
  4. Pour in vegetable broth and add the lemon juice and zest, stirring to combine. Bring to a boil.
  5. Reduce heat to low, cover, and let it simmer for about 15-18 minutes until rice is tender and liquid is absorbed.
  6. Remove from heat, let it sit covered for 5 minutes, then fluff with a fork. Season with salt and pepper, and sprinkle with fresh herbs before serving.

Notes

For a healthier alternative, you can use brown rice which offers more fiber and nutrients.
