Description

A comforting casserole that combines flavors from classic French onion soup with chicken and orzo pasta, perfect for busy weeknights.


Ingredients

  • 1 pound Boneless Chicken Breasts, cut into bite-sized pieces
  • 1 cup Orzo Pasta
  • 2 large Onions, sliced
  • 2 cups Beef Broth (or low-sodium chicken broth)
  • 1 cup Grated Gruyère Cheese (or Swiss cheese)
  • 2 tablespoons Butter (or olive oil)
  • 1 teaspoon Thyme
  • Salt and Pepper, to taste

Instructions

  1. Prepare the Chicken: Cut your boneless chicken breasts into bite-sized pieces.
  2. Sauté the Onions: Melt the butter in a large skillet over medium heat. Add sliced onions and a pinch of salt, sautéing until golden and caramelized, about 15 minutes.
  3. Cook the Chicken: Add the chicken pieces to the skillet with the onions and cook until no longer pink in the center, about 5-7 minutes.
  4. Combine with Broth and Orzo: Pour in the beef broth and stir in the orzo. Bring to a boil, then reduce to a simmer until the orzo is tender, about 10-12 minutes.
  5. Add Cheese and Spices: Stir in the thyme and half of the grated cheese, mixing until melted.
  6. Finish and Serve: Transfer to a baking dish, top with remaining cheese, and broil for 3-5 minutes until bubbly and golden.

Notes
