- 1 pound Boneless Chicken Breasts, cut into bite-sized pieces
- 1 cup Orzo Pasta
- 2 large Onions, sliced
- 2 cups Beef Broth (or low-sodium chicken broth)
- 1 cup Grated Gruyère Cheese (or Swiss cheese)
- 2 tablespoons Butter (or olive oil)
- 1 teaspoon Thyme
- Salt and Pepper, to taste
Instructions
- Prepare the Chicken: Cut your boneless chicken breasts into bite-sized pieces.
- Sauté the Onions: Melt the butter in a large skillet over medium heat. Add sliced onions and a pinch of salt, sautéing until golden and caramelized, about 15 minutes.
- Cook the Chicken: Add the chicken pieces to the skillet with the onions and cook until no longer pink in the center, about 5-7 minutes.
- Combine with Broth and Orzo: Pour in the beef broth and stir in the orzo. Bring to a boil, then reduce to a simmer until the orzo is tender, about 10-12 minutes.
- Add Cheese and Spices: Stir in the thyme and half of the grated cheese, mixing until melted.
- Finish and Serve: Transfer to a baking dish, top with remaining cheese, and broil for 3-5 minutes until bubbly and golden.
Notes
Garnish with fresh herbs and serve with a side salad or crusty bread.
