- 2 cups mashed potatoes
- 2 cups all-purpose flour (or gluten-free option)
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 4 ounces cream cheese (or Greek yogurt)
- 1/4 cup chopped fresh chives
- 2 tablespoons everything bagel seasoning
Instructions
- Prepare the mashed potatoes by boiling the potatoes until soft, then mashing them until creamy.
- In a large bowl, combine the flour, baking powder, salt, garlic powder, and onion powder. Whisk together until well blended.
- Add the warm mashed potatoes, cream cheese, and chives to the dry mixture. Stir until a dough begins to form.
- On a lightly floured surface, turn out the dough and knead it gently for a minute. Divide the dough into equal portions and flatten each into a disc, about 1/2 inch thick.
- In a skillet over medium heat, add a splash of oil. Cook each flatbread for about 3-4 minutes on each side, or until golden brown.
- Once cooked, sprinkle everything bagel seasoning over the warm flatbreads. Serve immediately or let cool for storage.
Notes
For a healthier version, consider using whole wheat flour and low-fat cream cheese.
