Description

A delightful, crispy flatbread made with creamy mashed potatoes, perfect for various meals or as an appetizer.


Ingredients

  • 2 cups mashed potatoes
  • 2 cups all-purpose flour (or gluten-free option)
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 4 ounces cream cheese (or Greek yogurt)
  • 1/4 cup chopped fresh chives
  • 2 tablespoons everything bagel seasoning

Instructions

  1. Prepare the mashed potatoes by boiling the potatoes until soft, then mashing them until creamy.
  2. In a large bowl, combine the flour, baking powder, salt, garlic powder, and onion powder. Whisk together until well blended.
  3. Add the warm mashed potatoes, cream cheese, and chives to the dry mixture. Stir until a dough begins to form.
  4. On a lightly floured surface, turn out the dough and knead it gently for a minute. Divide the dough into equal portions and flatten each into a disc, about 1/2 inch thick.
  5. In a skillet over medium heat, add a splash of oil. Cook each flatbread for about 3-4 minutes on each side, or until golden brown.
  6. Once cooked, sprinkle everything bagel seasoning over the warm flatbreads. Serve immediately or let cool for storage.

Notes

For a healthier version, consider using whole wheat flour and low-fat cream cheese.
