Ingredients

1 cup fresh cranberries
1/2 cup granulated sugar (or honey/maple syrup)
1/2 cup water
6 ounces dark chocolate (70% cocoa or higher)
Coarse sea salt
Instructions
- In a medium saucepan, combine fresh cranberries, granulated sugar, and water. Bring to a moderate boil over medium heat, stirring occasionally until the cranberries burst and soften (about 10 minutes).
- Remove from heat and let the sauce cool to room temperature. Transfer to a shallow bowl to speed up the cooling process.
- Form bite-sized pieces from the cooled cranberry sauce and place them on a parchment-lined baking sheet. Freeze for about 30 minutes.
- Melt the dark chocolate in a microwave-safe bowl or double boiler, stirring until smooth.
- Dip each cranberry bite into the melted chocolate, letting the excess drip off before returning them to the baking sheet.
- While the chocolate is still wet, sprinkle a small pinch of coarse sea salt on each bite.
- Refrigerate until the chocolate has fully set (about 30 minutes) before serving.

These bites can be stored in an airtight container in the fridge for up to a week or frozen for up to three months.
