Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large mixing bowl, combine the softened butter and granulated sugar. Cream until light and fluffy (about 3-5 minutes).
  3. Mix in the egg and vanilla extract until smooth.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add to the wet ingredients and mix until just combined.
  5. Using a small cookie scoop or tablespoon, portion and roll the dough into balls about the size of a walnut. Place them on the prepared baking sheets.
  6. Gently press down on each dough ball to flatten slightly.
  7. Bake for 10-12 minutes, or until the edges are lightly golden.
  8. Let the cookies cool on the sheets for 5 minutes before transferring to a wire rack to cool completely.

Notes

Allow butter to soften at room temperature before starting for best results. Store cookies in an airtight container to keep them fresh.
