Ingredients

  • Puff Pastry
  • Onions (yellow or sweet)
  • Goat Cheese
  • Olive Oil
  • Balsamic Vinegar
  • Fresh Thyme

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Roll out the puff pastry and score a 1/2-inch border around each square.
  3. In a skillet, heat olive oil and sauté sliced onions for 15-20 minutes until caramelized. Deglaze with balsamic vinegar, then add thyme, salt, and pepper.
  4. Spread the caramelized onion mixture on the puff pastry and crumble goat cheese on top.
  5. Bake for 20-25 minutes until golden and puffed.
  6. Allow to cool slightly before slicing and serve warm or at room temperature.

Notes

For a healthier option, use whole wheat puff pastry or low-fat goat cheese. Garnish with fresh herbs and pair with a salad.
